Today felt as though it was going to be one of those “expect the best but prepare for the worst” sort of days. I often anticipate that when stresses pile up. And inexplicably, quite magically, the best triumphed. There were no lineups at the Uni registrar’s office, no lineup at student accounts, no lineup at the bank, no lineup at the gro-sto … and green lights all the way home. A much-needed boost of a day for me.
A day that rolled out quite leisurely in fact, and one that had lingering summer written all over it. By the time I left the grocery store, my cart was filled with summery foods. I’ve been craving (and eating) salmon and greens lately. So this eve’s dinner was no exception: a plate bursting with arugula, fennel, cucumber, tomato, cilantro, toasted pepitas, smoked salmon and some mighty fine yogurt-dill dressing. Soups are on the horizon … but not yet!
Here’s to the sun setting slowly on summer …

Wow that looks amazing. So amazing. Arugula! I always forget how much I love it. And fennel? I haven’t thought of getting that aside from years ago when it used to come in my farm share…I will have to remedy that situation soon. Thanks for the inspiration!
Fennel is one of those funny-looking vegies that a lot of people pass by in the produce section. But it’s a fav of mine, especially when the fronds are still attached. I love it shaved thinly in salads, but I especially love it roasted. Aren’t farm shares the best?!
Farm shares have taught me more than I think I’ve ever learned about veggies and how to cook them. Otherwise, when would you really choose to get like eight pounds of rudabegas? I still haven’t had one since I don’t think…but still. Amazing! I have to find some fennel soon. It’s so fancy and refreshing!
